Recipe : Blackened Salmon, with Green Goddess Avocado Salad

This recipe is adapted from Donal Skehan's book 'Home Cooked' which I'm finding we're using quite a bit recently. It has some nice and quick, healthy recipes for midweek suppers, a lot of which happen to be wheat free (yay!). This dish is full of great flavours with the spicy succulent salmon and fresh, zingy salad - as an aside, I apologise if the phase "green goddess" makes you cringe as much as me but the dressing tastes good enough to let it slide!  

Blackened Salmon, with Green Goddess Avocado Salad

Serves 4 (or in our house two for dinner and the next day's packed lunches)

I served with a simple rice 'n pea :  add a tin of kidney beans (water and all) to your pan of rice along with half a tin of coconut milk, top up with water if necessary and cook/steam as 
normal.

// for the blackened salmon

1 tsp paprika
1 tsp chilli powder
1 tsp cayenne pepper
1 tsp garlic powder
4 Salmon Fillets (ideally skin on)
olive oil for drizzling
// for the salad
2 little gems / 1 romaine lettuce
6 radishes 
2 ripe avocado 
3 spring onions
// for the dressing
3 tbsp coconut milk
1 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 garlic clove 
a handful of chives

~Pre-heat grill. Mix the spices on a flat plate, drizzle the skin side of the salmon fillets with olive oil and place in spice mix to coat. Set the fillets aside on grill-pan ready to cook.
~Shred the lettuce, chop the avocado and slice the radishes and sping onions and arrange salad on a platter or serving board. Roughly chop the chives and garlic and pop into hand/bullet blender along with the other dressing ingredients. 
~Place the fillets under the grill to cook and blacken for 8 mins - no need to turn but keep an eye on them and lower the grill pan if blackened is becoming just plain burnt! Meanwhile whizz up the dressing, pour over salad. Plate up the fish and serve with the board of dressed salad.
